Fresh Spring Rolls (Pork)

Fresh rolls are a healthy and simple crowd-pleaser that can be made well before your guests arrive.  The combination of fresh herbs, vegetables, and meat (in this case, lots of meat) can be served as both for an appetizer or a main course.  You can also replace the pork with shrimp, tofu, or any protein of choice.  Pro-tip: When helping my grandmother make these, she always had me slice the meat on a cutting board where garlic had been previously diced to maximize flavor. 

Serves 4-5 people as an appetizer; 2-3 people as a main dish


Garlic-Stuffed Pork (click on link for directions)

  • 1 pound of pork loin, cut into rounds (?)
  • 3-4 cloves of garlic
  • 2 tablespoons sugar
  • 1 teaspoon of salt


  • 2 small carrots, julienned
  • 1 cups/sprigs of fresh basil leaves
  • 3 cups of cooked rice noodles
  • 2 cups spinach
  • 1/2 cup of cilantro
  • rice paper wrappers

Dipping sauce


  1. Prepare the garlic-stuffed pork
  2. Wash and prepare all other ingredients
  3. Wet rice paper and place on a plate or cutting board.  After about 45 seconds, the paper should be completely soft and easy to use.  Layer your ingredients and roll up as tightly as possible. Repeat until all ingredients are done.  You should end up with 10-12 rolls.
  4. Mix together dipping sauce
  5. Store in the refrigerator up to 5-6 hours ahead of time or serve immediately
