  • 2 pounds of small red potatoes, quartered
  • 1/4 cup of Shallot Oil
  • 2 tablespoons of Amber Vinegar
  • 1/4 cup of fresh thyme, minced
  • Salt & pepper to taste

  1. Cook potatoes in salted, boiling water until tender (about 12-15 minutes)
  2. Drain potatoes and combine all ingredients, mixing well
  3. Serve at room temperature and enjoy
