Vietnamese Simple Salad
This simple salad dish is one of the easiest and healthiest way to enjoy all our products together. Just assemble and pour for a memorable meal for yourself and your guests.
Serves 2-3 as side salad; serves 2 as main dish
Ingredients:
- 1 container (8 oz) mixed greens
- 1 cup cherry tomatoes (the more colors the better!)
- 1 ripe avocado
- 1/4 cup of crushed peanuts (use a mortar and pestle)
- 1 small cucumber, peeled and sliced
- 1 carrot, peeled and shredded
- 1/4 cup shallot crisps (if available)
Dressing:
- 3 tablespoons of shallot oil
- 1/3 cup amber vinegar
- salt and pepper to taste
DIrections
- Place mixed greens in serving bowl followed by all other prepared vegetables.
- Add peanuts and shallot crisps.
- Mix together amber vinegar & shallot oil and pour onto salad right before serving. Can be made up to a day in advance if not dressed.
