Vietnamese Simple Salad

This simple salad dish is one of the easiest and healthiest way to enjoy all our products together.  Just assemble and pour for a memorable meal for yourself and your guests.

Serves 2-3 as side salad; serves 2 as main dish


  • 1 container (8 oz) mixed greens
  • 1 cup cherry tomatoes (the more colors the better!)
  • 1 ripe avocado
  • 1/4 cup of crushed peanuts (use a mortar and pestle)
  • 1 small cucumber, peeled and sliced
  • 1 carrot, peeled and shredded
  • 1/4 cup shallot crisps (if available)



  1. Place mixed greens in serving bowl followed by all other prepared vegetables.
  2. Add peanuts and shallot crisps.
  3. Mix together amber vinegar & shallot oil and pour onto salad right before serving.  Can be made up to a day in advance if not dressed.
